Hey there! This is Leslie Kolovich and joining me is elite racer Jenny Kalmbach. She shares her favorite Oatmeal recipe given to her from her aunt, she affectionately calls it Aunt Mimi’s Raw Oatmeal.

Enjoy this simple, hearty, healthy recipe to fuel you through a long paddle, racing or just heading out the door to punch the clock for the 8- 5 workday.

Jenny Kalmbach’s Oatmeal Day Starter

1/2 c raw oats
1/2 c water and 3/4 c water
1 ripe banana
1 Tbls walnuts or almonds
1 tsp honey
1/2 tsp vanilla
handful of dates

Pour 1/2 c water over oats. Let soak for 5 minutes. Blend 3/4 c water, banana, nuts, honey and vanilla until smooth (this is the “nut milk”). Pour over soaked oatmeal. Top with extra dried fruit and nuts.
Don’t forget to top with a dash of cinnamon a very good spice for our body.

Low Sugar, Low Carb Recipes from SUP Chef Marty Hickman

 Chef  Marty Hickman born and raised in the  Pensacola Florida area.  Marty received a AA degree in Culinary Arts, Baking and Pastry Arts from the Sullivan College in Louisville, Kentucky.  He now has been working in the culinary/baking industry for 20 plus years, and currently is the Asssitant Pastry Chef at the Hilton in Pensacola Beach Florida.

In March of 2011 he was diagnosed with Type 2 Diabetes as you can imagine for a pastry chef  not an easy pill to swallow.  In April 2011 his friends introduced him to the sport of SUPing, and as many say, he was hooked.  However, the sport played more of a role than recreation for him.  It helped change his life forever.  Marty truly is an inspiration to many!

Blue Cheese and Horseradish Cole Slaw
1 Med Head Cabbage cored and thinly sliced
1 cup low fat sour cream
1/4 cup white wine vinegar
1/2 cup blue cheese crumbled or more to taste
1/4 tablespoon prepared horseradish (more or less to taste)
Kosher salt or even better Sea Salt and black pepper to taste
Combine all ingredients in a bowl and mix till just combined. Let sit for 1 hour in the refrigerator and then taste to adjust seasonings. Once tasted and seasonings adjusted to liking, serve cold with favorite beef or pork dish. Goes great with burgers or grilled pork chops.
BTO Hamburgers (Basil Thyme and Oregano)
1 pound ground chuck,  hamburger meat or ground turkey or chicken
1 teaspoon ground basil ( if using fresh use 1and 1/2 teaspoon)
1/2 teaspoon ground thyme ( if using fresh use 3/4 teaspoon)
1/4 teaspoon ground oregano ( if using fresh use 1/2 teaspoon)
1/4 teaspoon kosher or sea salt
1/4 teaspoon ground black pepper
Combine all ingredients together in a bowl and then take meat mix and make into patties. Grill to the desired doneness and top with ( if desired) the Blue Cheese and Horse Radish Cole Slaw. These burgers are great on multi grain buns. If you want a bit of a kick to your cole slaw you can add 1/4 teaspoon of your favorite Cajun spice to the Cole slaw.
Tomato, Cucumber and Purple Onion Salad
1 Large cucumber
2 Med-Large vine ripe tomatoes
1/2 Med purple onion
2 Tablespoons of Honey
2 to 3 Tablespoons of oil
4 to 6 Tablespoons of red wine vinegar.
Kosher or sea salt and black pepper to taste
Cut tomato into wedges. You should get 8 per tomato. Place into a bowl. Next cut cucumbers into slices and place in bowl with tomato wedges. Then finely slice the purple onion and place into bowl with the tomatoes and cucumbers. Nest add the honey, the oil, the red wine vinegar and the salt and pepper. Mix till combined and then taste to adjust seasoning. This salad should not be to bitter or to sweet. Place in the refrigerator till time to serve. Take out just before serving and mix again just to coat the tomatoes, cucumbers and onion with the liquid mix then serve as desired.

Hands & Lives A Photographic Documentary By Stefan Daiberl-SUP Radio Show

Hey there this is Leslie Kolovich and joining me today is artist/photographer, Stefan Daiberl.  I first was informed of his project, Hands and Lives when Justin Riney with Expedition Florida 500 was in my studio and running outside to meet Stefan to have his hands photographed by him.  Ok, I knew right then I had to know more about this very interesting project.  Stefan talks about the inspiration for doing a photographic documentary of hands, and feels “it’s an illustration of life leaping through the pictures”.  Stefan says,” hands record life, and the passage of time“. 

Stefan has been living here in my neighborhood along the Gulf Coast of Florida since 2003, moving from New York City close after the 9-1-1 tragedy.  He tells us his story of transformation from the business world to a more creative existence.  Literally coming from “ground zero”, personal transitions, and finding inspiration in the forests that helped him rebuild and reconnect his life through art.
